Turkey and bacon Tetrazzini serves 4 8oz cooked turkey pieces 8oz spaghetti 4 rashers bacon - chopped 1 red pepper - sliced 3oz grated cheddar cheese 1 1/2 oz butter 1 1/2 oz plain flour 1 egg yolk 1/4 pint milk 3/4 pint chicken stock seasoning 1/4 tsp nutmeg 2 tbsp sherry METHOD Break spaghetti into 4" lengths, cook and drain.Fry bacon until crisp. Add turkey and red pepper and cook for a few minutes. Remove from heat and stir in cooked spaghetti. Spoon mixture into an ovenproof dish and leave on one side.Melt butter, stir in flour and cook for a minute.Add milk and stock gradually. Bring to boil and allow to thicken. Add cheese, seasoning to taste, nutmeg and sherry. Stir until cheese has melted. Remove from heat and stir in egg yolk. Pour sauce over spaghetti mixture.
